Here’s what you’ll need to make this homemade mayo recipe.
- Egg: We use pasteurized eggs to ensure safety since we use a raw egg in this recipe.
- 1 large pasteurized egg
- Mustard: Adds flavor and helps stabilize the mixture.
- 1 tablespoon Dijon mustard
- Vinegar: Adds a tangy flavor.
- 1 tablespoon vinegar (white wine or apple cider) or lemon juice
- Avocado Oil: A healthy, neutral-flavored oil perfect for mayonnaise.
- 1 cup avocado oil
- Fine sea salt: 1/4 teaspoon
- Optional: 1 teaspoon lemon juice for extra tang🍋
Equipment
- Food processor or Blender
- Measuring spoons(1 tbsp and 1 tsp) and 1 cup(8 oz)
- A tall jar if using an immersion blender. You’ll also need a jar for storing purposes.
Instructions
Step 1: Add only the egg yolk to the bowl or jar. Process for about 30 seconds.
Step 2: Add mustard, vinegar, and salt. Process for another 30 seconds.
Step 3: Begin to slowly add the avocado oil in small amounts while processing or between processing. This slow addition is crucial to achieve a thick, creamy mayonnaise.
Step 4: After all the oil is incorporated, process for an additional 20 seconds. Taste and adjust with more salt or lemon juice if needed.
Storing & Uses Of Your Mayonnaise
Store your homemade mayonnaise in a tightly sealed container in the refrigerator. It will keep fresh for up to 2 weeks.
